Red Quinoa Salad

Servings: 6

1 bag red quinoa

4 cloves garlic (finely chopped)

1 lime

1 large tomato (chopped)

2 avocados (cubed)

¼ cup red onion (chopped)

Cilantro (handful, chopped)

Salt and pepper

Prepare the red quinoa according to directions. While the quinoa is cooling, combine garlic, the juice of the lime, tomato, avocado, red onion and cilantro. Once quinoa is cooled, add mixture; combine well. Add salt and pepper to taste.

Alternatives: use lemon instead of lime; use green onion instead of red onion; use parsley instead of cilantro; add additional vegetables; add halved pistachios if there are not nut allergies; add pomegranate seeds. Play and enjoy!
