Gluten Free Recipe – Whipped Butternut Squash

Gluten free recipe for squash
is a perfect addition to a holiday meal!
- 2 medium Butternut squash or 1 large (about 5 lbs total) halved and seeded
- ½ cup butter
- ¼ cup light sour cream
- Dash of ground black pepper and two dashes of salt
- ¼ teaspoon of cinnamon
- 1 T brown sugar
Preheat oven to 350 degrees. Place squash halves cut side down in a medium baking dish with enough water to cover. Cover, and bake 1 hour in the preheated oven, until tender. Scoop squash from skin into a medium bowl, and mix with butter and light sour cream. Whip until smooth. Add salt and pepper, cinnamon, and tablespoon of brown sugar; whip smooth. Ready to serve.
