Gluten Free Pie Recipe – Blueberry

Servings: 8 slices
- 3 cups blueberries
- 1/2 cup sugar
- 1/4 tsp salt
- 1/4 cup cornstarch, mixed with ¼ cup water
- 3/4 cup hot water
- 2 tsp lemon juice
- Sweet Ali’s prepared pie crust, or prepared pie dough ball to roll out your own crust.
In a sauce pan, combine 1/2 cup blueberries, sugar, salt, cornstarch mixture and hot water. Cook over medium heat until thickened. Simmer 5 minutes and crush down the blueberries. Add lemon juice and stir. Pour mixture over the rest of the blueberries in a separate bowl and combine. Let stand until cool. Pour into crust. Top with 2nd crust, if desired. If using a top crust, make sure to put slits in the top to allow steam to escape. Brush with milk for a shiny appearance, egg for a glazed look, and/or sugar for your crust to sparkle. Bake in a 375 degree oven about 50 minutes until crust is golden brown. If you do not use a top crust, reduce baking time to 35 minutes.
