Gluten Free Waffles

We are, without a doubt, a pancake house. Lazy weekend mornings … big stack of jacks, fruit, bacon. Delicious … I can almost taste the memories.

But then, I received a gift. A waffle maker! My own, completely dedicated gluten free waffle maker. What’s a gluten free girl to do? Make waffles, of course. So, I grabbed my bag of Sweet Ali’s Gluten Free Pancake Mix, and I tweaked the recipe oh so slightly (see below). And what happened …

Perfection. And smiles. And a new weekend ritual.

These waffles keep well for a quick school day breakfast. Just heat them up in your dedicated gluten free toaster, and those weekend waffle smiles return.


Sweet Ali’s Pancake Mix Waffles

1 egg

1 cup milk (or dairy free alternative)

1 teaspoon vanilla

2 tablespoons melted butter (or butter alternative)

1 cup plus 2 tablespoons Sweet Ali’s Pancake Mix


In a mixing bowl, whisk together 1 egg, 1 cup milk and 1 teaspoon vanilla, then add 2 tablespoons melted butter. Add 1 cup and 2 tablespoons of Sweet Ali’s Pancake Mix and combine until flour is no longer visible, but do not overbeat.

Let waffle mixture sit for 15 minutes while the waffle maker heats thoroughly. (I’m not sure why letting the mixture “rest” makes it better, but it really does!) Once your machine signals that it’s ready, scoop the recommended amount for your waffle maker. (FYI, mine is a small round, and I used just over half a cup per waffle. Also, each batch makes approximately 4 waffles with my machine.)

And don’t think waffle makers are just for waffles … next time, it’s paninis!
