Gluten Free Savory Cheese Fondue

8 ounces Swiss cheese, shredded
8 ounces Gruyere cheese, shredded
2 tablespoons cornstarch
1 clove garlic, peeled and cut in half length-wise
1 cup of your favorite white wine
1 tablespoon freshly squeezed lemon juice
1/2 teaspoon dry mustard
1/8 teaspoon nutmeg
Combine cheeses and cornstarch in a bowl; set aside. Rub pieces of garlic around inner sides and bottom of an electric fondue pot; discard the garlic.
Heat the fondue pot to medium and add wine and lemon juice. Once the liquid comes to a simmer, add the cheese one handful at a time, gently stirring it. As each handful melts, add the next until all of the cheese has been added and is melted. Stir in mustard and nutmeg.
Serve with a variety of gluten free bread, focaccia, apples and vegetables – all prepared in bite-sized pieces.
