Gluten Free Recipe – Broccoli with Pine Nuts and Lemon

Try this gluten free recipe for your broccoli side dish!
- 4-5 lbs. broccoli
- 2 tsp. grated lemon zest
- 4 garlic cloves, peeled and thinly sliced
- 3 T pine nuts
- olive oil
- 2 T lemon juice
- 1 1/2 tsp. kosher or sea salt
- 2 T julienned basil leaves
- 1/2 tsp. black pepper
- 1/3 cup grated parmesan
Preheat oven to 425. Cut broccoli florets leaving an inch or two of stalk attached. (There should be around 8 cups.) Place broccoli on a sheet pan in a single layer. Add garlic and drizzle with 5T of olive oil. Sprinkle with salt & pepper. Roast for 20 – 25 minutes until some of the broccoli tips are browned. Add pine nuts a few minutes before taking from the oven.
Remove from oven and toss with 1 1/2 T olive oil, lemon zest & juice, parmesan & basil.
